De Sousa Cuvée UMAMI Extra Brut Grand Cru is a distinctive Champagne from one of the most respected names in the Côte des Blancs, crafted to highlight both precision and depth. Made from Grand Cru vineyards and shaped by biodynamic farming, it stands out for its unusual umami-driven character, layered complexity, and elegant Extra Brut style.

Makuprofiili
In the glass, it shows a brilliant golden colour with a refined, persistent mousse. The nose is expressive and multifaceted, with ripe citrus, white flowers, toasted nuts, and a subtle spice that adds intrigue and savoury depth. The palate is rich yet focused, combining lively acidity with a creamy texture and flavours of lemon, pear, white peach, and a light toasty note. A long, mineral finish gives the wine its signature umami impression and plenty of dimension. Thanks to its structure and freshness, it should age gracefully for several years, gaining even more complexity over time.

Viininvalmistus
This cuvée comes from Grand Cru vineyards in the Côte des Blancs, an area celebrated for its chalky soils and exceptional Chardonnay, while Pinot Noir adds structure and balance. Old vines are farmed biodynamically, with a strong emphasis on respecting terroir and preserving vineyard vitality. Vinification is carried out with the aim of expressing purity, texture, and the savoury depth that defines the UMAMI concept.

Ruoka & tarjoilu
Serve chilled at around 8-10°C. It pairs beautifully with oysters, shellfish, delicate fish dishes, sushi, and fine cheeses, especially those with a creamy or nutty profile. Decanting is not necessary, though a little time in the glass can help reveal its full aromatic complexity.
