The nose is lifted and expressive, with red cherry, raspberry, violet, and a subtle mineral spice, followed by tertiary notes of forest floor and dried flowers as it opens. The palate is all about finesse: fresh acidity carries the red fruit beautifully, while fine tannins and an airy structure give the wine shape without weight. It has reached a harmonious level of development, yet still retains clarity and balance on the finish. While already drinking very well, it can continue to evolve gracefully over the medium term, gaining further nuance rather than intensity.

Bonnes-Mares in this context comes from Roumier’s historic vineyard holdings straddling the transition between Chambolle-Musigny and Morey-Saint-Denis, where pale limestone and darker, iron-rich clay create a strikingly complex terroir. The 2007 growing season required patience, but careful timing allowed for healthy fruit with excellent freshness and aromatic definition. The grapes were harvested by hand, partially destemmed, and vinified in the traditional Burgundian way before aging in oak barrels for around 16 months.

This wine pairs beautifully with refined dishes such as roast duck, pigeon, veal tenderloin, game birds, or mushroom-based preparations like wild mushroom risotto. It also works well with truffled poultry or aged hard cheeses. Serve at around 16-18°C, and if the bottle has been resting for a while, a gentle decant of 30-60 minutes can help the aromatics unfold without losing delicacy.
