Makuprofiili
In the glass, the 2019 vintage shows impressive concentration with a vibrant, polished presence. Aromas of dark cherry and blackberry are lifted by floral notes of violet and peony, while a subtle mineral edge and a lightly saline character add complexity and tension. On the palate, the wine is tightly structured yet beautifully composed, with intense fruit, lively acidity, and finely tuned tannins. It already shows a striking sense of elegance, but its depth and balance point clearly toward long aging potential, where it will continue to gain nuance and complexity over time.

Viininvalmistus
The vines come from the celebrated Grand Cru Bonnes-Mares, where Domaine Georges Roumier holds parcels rooted in a mix of limestone marl and clay soils. The terroir brings both structure and finesse, while the vineyard’s heritage in one of Burgundy’s most esteemed sites gives the wine its distinctive character. Harvesting is done by hand, and vinification follows a meticulous approach with partial whole-cluster fermentation, spontaneous yeast fermentation, and maturation in oak barrels for around 16 to 18 months, including approximately 33% new wood.

This is a wine that pairs beautifully with refined dishes such as roast duck, pigeon, veal, mushroom risotto, or game birds, as well as truffled preparations and aged hard cheeses. Serve at around 16–18°C to bring out its aromatic detail and balance, and consider decanting young bottles for an hour or two to help open the wine’s layered bouquet and structure.
