Enrico Serafino Alta Langa Riserva Pas Dose Sboccatura Tardiva 2019 is a refined expression of Piedmont’s classic-method sparkling wine tradition, crafted for those who appreciate precision, depth, and elegance. Made predominantly from Pinot Noir with a smaller proportion of Chardonnay, it stands out for its zero-dosage style and extended lees aging, offering a pure, dry, and distinctly sophisticated profile. Inspired by the high standards of Alta Langa, it reflects both technical mastery and the region’s growing reputation for premium sparkling wines.

In the glass, this sparkling wine is likely to show a bright, luminous color with fine, persistent bubbles, a sign of its long maturation on the lees. The nose should unfold with layered aromas of citrus zest, green apple, white flowers, toasted brioche, and subtle mineral notes, with the Pinot Noir bringing structure and the Chardonnay adding lift and finesse. On the palate, expect a crisp, focused, and energetic style with excellent tension. The absence of dosage allows the wine’s underlying fruit, saline freshness, and autolytic complexity to shine through, finishing dry and precise. With its 60 months on the lees, it has both immediate appeal and the structure to age gracefully for several more years, developing even greater depth and nutty complexity.

Viininvalmistus
Produced in Piemonte within the Alta Langa appellation, this wine comes from a cool-climate terroir well suited to sparkling wine production, where elevation and temperature variation help preserve acidity and aromatic purity. The blend is composed of 85% Pinot Nero and 15% Chardonnay, and the wine is made using the traditional method, with secondary fermentation in bottle followed by around 60 months of lees aging. It is released as Pas Dosé, meaning no expedition liqueur is added after disgorgement, resulting in a taut, uncompromising style that highlights the quality of the base wine and the patience of its cellar time.

Ruoka & tarjoilu
This is an excellent match for oysters, scallop crudo, sushi, tempura, light seafood risotto, or delicate white meats such as roast chicken or veal. It also pairs beautifully with aged hard cheeses and refined antipasti. Serve well chilled at around 8–10°C, and decanting is not recommended; instead, open it shortly before serving to preserve its freshness and fine mousse.
