Peter Michael Les Pavots 2016 is a flagship Bordeaux-style blend from Knights Valley that aims squarely at the elegance and depth of great Left Bank wines. Built from Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, it combines power, precision, and a distinctly polished Californian character. The wine is named after the estate’s Les Pavots vineyard and reflects Peter Michael Winery’s long-standing ambition to craft world-class mountain Cabernet blends.

Makuprofiili
In the glass, this is a deep, dark, richly colored red wine that immediately signals concentration and intensity. The bouquet is layered with dark cherries, blackberries, blueberry coulis, morels, fresh leather, and vanilla, giving it both ripe fruit depth and savory complexity. On the palate, it is full-bodied and structured, with a plush, velvety texture and plenty of richness. The aromas carry through beautifully, joined by notes of dark chocolate and sweet tobacco, while the oak is seamlessly integrated. Nicolas Morlet suggests giving the 2016 vintage another 2–3 years to develop further, but it already has the balance and structure to age gracefully for decades.

Viininvalmistus
Les Pavots comes from Peter Michael Winery’s estate vineyard in Knights Valley, California, a site known for its warm days, cooling influences, and hillside terroir that supports concentrated, finely structured Bordeaux varieties. For the 2016 vintage, winemaker Nicolas Morlet selected 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot, and 7% Petit Verdot. The wine was aged for 18 months in 100% French oak barrels and bottled unfiltered to preserve texture and complexity.

Ruoka & tarjoilu
This is an excellent match for prime rib, grilled ribeye, lamb chops, braised short ribs, venison, or dishes with truffle and mushroom accents. It also pairs well with aged hard cheeses and rich roasted vegetables. Serve at around 16–18°C; decanting for 1–2 hours is recommended if drinking young to help the wine open up and show its full aromatic range.
