Quilceda Creek Cabernet Sauvignon 2004

Quilceda Creek Cabernet Sauvignon 2004 is a benchmark Washington Cabernet and a standout example of how powerful and polished the style can be. Crafted entirely from Cabernet Sauvignon, with fruit sourced primarily from the legendary Champoux Vineyard in the Horse Heaven Hills AVA, it reflects both exceptional raw material and the meticulous hand of winemaker Paul Golitzin. This is a wine built for depth, precision, and long-term cellaring.

Makuprofiili
In the glass, it shows a deep, nearly inky color that immediately signals concentration and intensity. The nose is layered and expressive, with aromas of blackcurrant, blackberry, and dark cherry lifted by notes of black truffle, violet, pencil shavings, dark chocolate, and sweet pipe tobacco. On the palate, it is full-bodied and beautifully composed, combining rich dark fruit with fine-grained tannins, polished oak, and a refined savory edge. Despite its power, the texture remains silky and harmonious, finishing with impressive length and elegance. While already compelling, this vintage has the structure and balance to continue evolving gracefully for many years.

Viininvalmistus
The wine is made from 100% Cabernet Sauvignon, sourced 90% from Champoux Vineyard and 10% from Mach One Vineyards, both in the Horse Heaven Hills AVA of Washington. This region is prized for its warm, dry climate, long growing season, and well-drained soils, which are especially well suited to Cabernet Sauvignon. Grapes are harvested by hand, with only the best fruit selected, followed by gentle fermentation and 20 months of aging in 100% new French oak to build structure, depth, and complexity.

This is a natural match for richly flavored dishes such as grilled ribeye, roast lamb, braised short ribs, venison, or aged hard cheeses. Serve at 16-18°C, and consider decanting for at least 1-2 hours if opening now, to allow the aromatics and structure to fully open up.
