Raveneau Chablis Grand Cru Blanchot 2012 is a beautifully mature expression from one of Chablis’ most revered estates. In the glass, this 2012 Blanchot shows a poised, developed golden hue that hints at its maturity. The nose opens with ripe citrus, white flowers, and a distinct chalky, lightly petroleum-tinged complexity, all lifted by a cool mineral edge. On the palate, it is concentrated and almost oily in texture, yet held together by razor-sharp acidity and a long, saline finish. Notes of grapefruit, stone fruit, and crushed rock linger with impressive intensity, and while it is drinking well now, it still has the structure to evolve gracefully for several more years.

Blanchot is one of Chablis’ Grand Cru climats, known for its fine, elegant profile and strong mineral expression, with the cooler limestone-rich soils contributing to the wine’s tension and precision. Domaine Raveneau is known for extremely low yields and meticulous vineyard work, with hand harvesting used to preserve fruit quality at the point of optimum ripeness. Fermentation and élevage are traditionally handled with great care to retain freshness, depth, and the site’s unmistakable saline character.

Ruoka & tarjoilu
This wine pairs naturally with refined seafood dishes such as oysters, scallops, lobster, turbot, or crab, as well as roast poultry in creamy sauces and elegant dishes with mushrooms or fresh herbs. Serve it at around 10–12°C to allow the aromatics and texture to unfold. Decanting is optional but can be beneficial for this mature vintage if you want to soften its restraint and open up the complex tertiary notes.
