In the glass, this 1983 Valmur has a mature, refined appearance that reflects its long bottle age. The nose unfolds with layers of dried citrus, honey, toasted nuts, and chalky mineral notes, gradually opening into subtler aromas of apple, mushroom, and a touch of salinity. The palate is silky and composed, with a beautifully integrated acidity that still gives the wine freshness and lift. Flavors of ripe orchard fruit, earthy mushroom, and saline minerals carry through a long, graceful finish. At this stage, the wine is at full maturity and should be enjoyed for its peak complexity rather than cellared further.

Ruoka & tarjoilu
This mature Chablis pairs beautifully with refined dishes such as lobster, scallops, turbot, roast chicken with cream sauce, or aged hard cheeses. Serve it slightly chilled, ideally around 10-12°C, to allow its aromatics and texture to show at their best. Decanting is generally not necessary, but a brief splash decant may help if the wine is showing reduction on opening.
