Tenuta Degli Dei Cavelli Toscana 2021 is a powerful and polished Super Tuscan blend from Panzano in Chianti, crafted by Tommaso Cavalli in collaboration with celebrated winemaker Carlo Ferrini. Made from Cabernet Sauvignon, Petit Verdot, and Cabernet Franc, it reflects the precision and depth that have made modern Tuscan reds so highly sought after. With its combination of ripe fruit, structure, and age-worthy character, this is a wine that speaks clearly of both place and ambition.

Makuprofiili
In the glass, the wine shows a deep, dense ruby color that immediately suggests concentration and richness. The nose opens with layers of blackberries, cassis, and dark plum, followed by more nuanced notes of coffee, graphite, leather, and warm spice. The palate is full-bodied and firmly structured, yet refined, with silky tannins and well-balanced acidity giving the wine lift and definition. Dark fruit flavors are joined by hints of dark chocolate and a subtle mineral edge on the long finish. This is a wine with excellent aging potential, likely to develop even more complexity over the next decade or more.

Viininvalmistus
The grapes come from a hillside site in Panzano, in the Florence area, where loose marl-rich soils, a south-facing exposure, and vineyards planted at around 400 meters above sea level create ideal conditions for ripening. The fruit is hand-harvested and carefully sorted to ensure only the healthiest, most mature clusters are used. Fermentation is managed to extract color, structure, and aroma, followed by about 18 months of maturation in French oak barriques and tonneaux, partly new and partly used, with a final passage in cement tanks to preserve freshness and finesse.

Ruoka & tarjoilu
This wine pairs beautifully with grilled ribeye, roast lamb, braised beef, game, and rich Tuscan dishes such as pappardelle with wild boar ragù. It also works well with mature hard cheeses and dishes featuring mushrooms or truffle. Serve at 16–18°C, and consider decanting for at least 1 hour, especially in its youth, to allow the wine’s structure and aromas to open fully.
