González Byass Alfonso Oloroso Seco is a classic dry sherry with remarkable depth, elegance, and concentration. Matured for 8–10 years before release, it offers the kind of complexity and precision that make great sherry such a rewarding discovery. Originating from Jerez and crafted with grapes from the producer’s own vineyards, it reflects both tradition and the distinctive oxidative style that defines oloroso.
Makuprofiili
In the glass, Alfonso Oloroso Seco shows a luminous light mahogany color with glinting highlights. The bouquet is intense and layered, opening with hazelnuts, walnuts, caramelized almonds, sun-ripened citrus, orange peel, dried figs, iodine, toasted oak, salt, and a touch of vanilla.
The palate is dry, full-bodied, and wonderfully expressive, with a rounded texture and a deep, nutty core. Despite being bone-dry, the wine can give an impression of subtle sweetness thanks to its low acidity and rich oxidative development. The finish is long and persistent, with excellent intensity and the potential to continue evolving beautifully for years in bottle.
Viininvalmistus
This oloroso seco is made from Palomino Fino grapes sourced exclusively from González Byass’s own vineyards in Jerez, one of the great historic centers of sherry production. After vinification, the wine is aged in the producer’s traditional cellars, where long oxidative maturation shapes its character and complexity. Without the protective flor layer found in fino styles, the wine develops slowly through contact with oxygen, building its distinctive color, aroma, and depth over 8–10 years before release.
Ruoka & tarjoilu
This is a versatile but demanding food wine that shines when matched carefully. Try it with manchego, well-aged air-dried ham, mussels steamed in oloroso, wild game pâté, confit, onion soup, or a rich beef consommé. Serve slightly below room temperature, around 14–16°C, in a slender white wine glass to concentrate the aromas. Decanting is generally not necessary, but letting it breathe briefly in the glass can help open the wine further.
