Dominio de Pingus PSI 2021 Magnum

Dominio de Pingus PSI 2021 Magnum is a polished and expressive Ribera del Duero red that brings together old-vine Tempranillo with a touch of Garnacha for added brightness and perfume. Created by Peter Sisseck, it balances depth, freshness, and precision, while the magnum format gives the wine extra aging potential and even greater elegance in the cellar.

Makuprofiili
In the glass, PSI 2021 shows a deep, dark colour that hints at its concentration. The nose is layered with ripe blackcurrant, violet, and graphite, followed by juicy red plum, blackberry, and cherry. The palate is rich and full-bodied, yet lifted by a vivid freshness and precise acidity that keep everything in balance. Mature tannins, subtle minerality, and a supple, juicy core give the wine a refined, charming feel. It already offers plenty of appeal, but the magnum format suggests strong aging potential over the coming years.

Viininvalmistus
PSI is made from very old vines in Castilla y León, sourced mainly from 90% Tempranillo and 10% Garnacha. Fermentation takes place in concrete and stainless steel, with most of the wine kept in neutral tanks, while a smaller portion is aged in French oak, including some new barrels. The wine then spends around 18 months developing in used Dominio de Pingus barrels, a choice that adds depth and texture without masking the fruit-driven character of the vineyard sources.

Ruoka & tarjoilu
Serve PSI 2021 with roasted lamb, grilled beef, game, or rich mushroom dishes, as well as aged Manchego and other mature cheeses. Best enjoyed slightly below room temperature, around 16–18°C. Decanting for 1–2 hours is recommended if opening young, especially in magnum format, to let the aromas and tannins fully open.

Dominio de Pingus is the acclaimed project of Danish winemaker Peter Sisseck, whose work in Ribera del Duero helped redefine modern Spanish fine wine. Based in Castilla y León, the estate is known for old-vine fruit, meticulous vineyard selection, and a restrained approach in the cellar. PSI was created as a more accessible expression of the same philosophy, and it has become one of the region’s most respected wines for its purity, balance, and sense of place.
