Dominio de Pingus PSI 2022 is a striking expression of Castilla y León, blending mostly old-vine Tempranillo with a touch of Garnacha for extra lift and complexity. Crafted by Peter Sisseck, it combines depth, richness, and freshness in a style that feels both polished and expressive, with a pedigree that reflects the region’s best old vineyards and careful, hands-off winemaking.

Makuprofiili
In the glass, the wine shows a deep, dark color that hints at its concentration and ripe fruit profile. The nose is layered with fully ripe blackcurrant, violet, and graphite, giving it an aromatic profile that is both powerful and refined. On the palate, it is generous and full-bodied, with juicy red plum, blackberry, and cherry framed by ripe tannins and a precise mineral edge. Despite its richness, PSI 2022 keeps a lively freshness and balanced acidity that prevent it from feeling heavy. The use of older oak adds depth without overwhelming the fruit, and the wine already shows plenty of charm, though it should continue to develop nicely over the coming years.

Viininvalmistus
PSI 2022 comes from very old vines in Castilla y León, where the continental climate and mineral-driven soils help preserve freshness in the grapes while delivering intensity and structure. The wine is fermented in бетон? and stainless steel, with 80% kept in neutral tanks, while the remaining 20% is aged for 14 months in French oak, including 10% new barrels. It then spends a total of 18 months maturing in used Dominio de Pingus barrels, adding depth and texture without masking the vineyard character.

Ruoka & tarjoilu
This is an excellent match for grilled lamb, roast beef, game birds, Iberian pork, or rich mushroom dishes. Serve it at around 16–18°C, and consider decanting for 30–60 minutes if opening it young, as this will help the aromatics open up and soften the tannins.
