Fontanafredda Barolo Chinato is a classic Piedmontese specialty that combines the structure of Nebbiolo with a fragrant blend of herbs and spices. Produced in one of Barolo’s most respected historic houses, it offers a beautifully balanced mix of bitterness, sweetness, and aromatic complexity that has long made Chinato a cherished after-dinner drink in northern Italy.

In the glass, it shows a deep garnet hue with mahogany reflections. The nose is intense and layered, with notes of dried rose petals, cherry, citrus peel, cocoa, and a refined lift of warm spices and botanicals. On the palate, it is silky and gently sweet at the outset, followed by the signature Barolo Chinato bitterness, with flavors of bitter herbs, dark fruit, clove, and a long, elegant finish. Its appeal lies in the harmony between richness and aromatic tension rather than sheer power. While ready to enjoy now, the complexity of the base Nebbiolo and the herbal infusion give it enough depth to remain attractive over time when stored properly.

Barolo Chinato is traditionally made from Barolo wine based on Nebbiolo, infused with a proprietary selection of botanicals, spices, and cinchona bark, which gives the drink its characteristic bittersweet profile. Fontanafredda’s version reflects the cool-climate character and calcareous marl soils of Piedmont, where Nebbiolo develops its trademark perfume, acidity, and firm structure. The production process typically involves careful maceration of the aromatics in the wine, followed by sweetening and blending to achieve balance and complexity.

Ruoka & tarjoilu
Best served slightly chilled, around 14–16°C, Barolo Chinato is ideal as a digestif or alongside dark chocolate, almond-based desserts, tart fruit pastries, or mature hard cheeses. It can also be enjoyed on its own after dinner, with no decanting required.
