Rombauer Cabernet Sauvignon 2021

Rombauer Cabernet Sauvignon 2021 is a classic Napa Valley Cabernet with the richness, polish, and generosity that have made the winery a fan favorite for decades. Blended from 93% Cabernet Sauvignon with small amounts of Cabernet Franc and Petit Verdot, it offers the deep fruit, structure, and luxurious oak signature that define top-tier California Cabernet. First crafted in 1980, it helped establish Rombauer as one of the region’s most recognizable names in premium wine.

Makuprofiili
In the glass, the wine is nearly black with a vivid purple rim, hinting at its concentration and youthful intensity. The nose opens with a layered bouquet of black cherry, blackberry, cassis, tart pastry crust, mint, and warm spice, all framed by well-integrated oak. The palate is full-bodied and powerful, yet remarkably round and polished, delivering deep dark fruit, supple tannins, and plenty of richness through the finish. This is an archetypal Napa Cabernet with impressive balance and a long, lingering aftertaste. While already highly appealing, it should also reward short- to medium-term cellaring over the next several years.

Viininvalmistus
All of the fruit for this wine comes from Napa Valley, sourced from both Rombauer-owned vineyards and other carefully selected sites that contribute depth, structure, and ripe fruit character. Winemaker Richie Allen destemmed all of the fruit before pressing and fermentation, then aged the wine for 17 months in French oak barrels, 65% of which were new, to build complexity, texture, and aromatic layering.

Ruoka & tarjoilu
This Cabernet Sauvignon is an excellent match for grilled ribeye, braised short ribs, roast lamb, or rich dishes with mushrooms and truffle. It also pairs beautifully with aged cheddar or other hard cheeses. Serve at 16-18°C and decant for 1-2 hours if enjoyed young, to allow the wine to fully open and show its layered fruit and oak complexity.
