Babylonstoren Cabernet Sauvignon 2020

Babylonstoren Cabernet Sauvignon 2020 is a deep, rounded South African red that showcases the plush, layered style for which this historic estate has become known. Sourced from eight parcels on Simonsberg Mountain between Stellenbosch and Paarl, it combines ripe fruit, classic Cabernet structure, and careful oak maturation in a wine that feels both generous and composed. While thoroughly modern in its winemaking, it carries the quiet confidence of one of the Cape’s most established wine properties.

Makuprofiili
In the glass, it shows a deep red colour that hints at the richness to come. The nose opens with dark cherries, red plums, and blueberries, woven together with sweet tobacco and cedar. On the palate, the wine is velvety and full, revealing layers of fruit and oak spice as it develops, before finishing long, round, and satisfying. There is ample structure here to support further bottle age, with the wine drinking well now but also set to hold its form for around 10 years from release. As it matures, the fruit should integrate further with the oak, adding complexity while preserving the Cabernet Sauvignon backbone.

Viininvalmistus
The fruit for this wine comes from eight different parcels on Simonsberg Mountain, an area known for producing structured, expressive Cabernet Sauvignon thanks to its elevated sites and varied vineyard soils. The grapes are harvested from carefully managed blocks, with a focus on quality fruit and minimal interference in the cellar. After fermentation, the wine is matured for 18 months in oak barrels, with just over 40% new French oak, followed by three months of bottle ageing before release.

Ruoka & tarjoilu
This Cabernet Sauvignon is a natural partner for grilled ribeye, roast lamb, slow-braised beef, or venison, and it also works well with mature hard cheeses. Serve it at 16–18°C to let the aromatics and structure show at their best. Decanting for an hour or two is recommended if opening now, especially to soften the tannins and let the wine fully unfold.

Over the past decade, it has emerged as a leading modern producer, combining heritage with state-of-the-art cellar facilities and a strong focus on terroir-driven wines. Under winemaker Klaas Stoffberg and cellar master Charl Coetzee, the first Babylonstoren-branded vintage was released in 2011, marking the start of a highly successful new chapter for the estate.
