Bollinger R.D. Champagne 2007 is a rare and highly sought-after expression of Bollinger’s house style, combining power, depth, and remarkable freshness. Produced from 34% Chardonnay and 66% Pinot Noir, and released only after extended ageing and late disgorgement, it offers the kind of complexity and refinement that have made R.D. one of Champagne’s most iconic cuvées.

Makuprofiili
In the glass, it shows a rich golden hue with a fine, persistent mousse, reflecting both maturity and precision. The nose is layered and expressive, with aromas of baked citrus, ripe orchard fruit, toasted nuts, brioche, honey, and subtle spice from its extended lees ageing and oak influence. On the palate, the wine is broad, structured, and intensely flavorful, with Pinot Noir lending depth and muscle while Chardonnay brings lift and elegance. Expect notes of quince, dried apricot, hazelnut, buttered pastry, and chalky minerality, all carried by a lively backbone of acidity. Despite its maturity, it retains impressive energy and should continue to evolve gracefully over time.

Bollinger R.D. is made in Champagne, France, from fruit sourced from distinguished vineyard sites that contribute both concentration and finesse. The first fermentation takes place in oak barrels, a hallmark of the house, before the wine matures on lees in bottle under cork for many years. This lengthy ageing, followed by recent disgorgement, preserves freshness while allowing the wine to develop its signature depth, complexity, and layered texture.

Ruoka & tarjoilu
This is an excellent match for refined dishes such as lobster, roast poultry, truffled risotto, aged Comté, or mushroom-based preparations. Serve chilled at around 10–12°C, and while decanting is not essential, a short aeration can help the wine раскры its full aromatic complexity if opened young relative to its potential.
