Cavallotto Pinner 2024

Cavallotto Pinner 2024 is a distinctive organic white wine from Piedmont, crafted from native local white grapes with the precision and character that define the Cavallotto name. Fresh, structured, and deeply mineral, it reflects the family’s long-standing commitment to the Bricco Boschis vineyards in the heart of Barolo, where they have worked since 1928.

Makuprofiili
In the glass, it shows a bright, youthful straw-yellow colour. The nose is expressive and refined, offering intense aromas of tropical fruit that can evolve over time into more delicate floral notes. On the palate, the wine is lively yet beautifully textured, with a firm mineral backbone and impressive structure that gives it depth beyond its youth. Fresh and elegant now, it also has outstanding ageing potential, promising greater complexity and nuance with bottle maturation.

Viininvalmistus
Produced in Piedmont from indigenous white grapes grown under organic farming, Cavallotto Pinner is shaped by the family’s vineyards at Bricco Boschis, a prized site in the Barolo area known for its quality soils and strong sense of place. Vinification takes place at low temperatures over 20 to 30 days to preserve freshness and aromatics, followed by ageing on the lees for 9 to 12 months with daily bâtonnage, then an additional 3 months in bottle to round out the wine’s texture and character.

Ruoka & tarjoilu
This is a versatile white wine that pairs well with shellfish, grilled fish, risotto, pasta with herbs, vegetable dishes, and softly aged cheeses. Serve chilled at around 10-12°C, and decanting is not necessary unless you wish to let the wine open up more fully in its youth.
