Caymus Cabernet Sauvignon California 2022 brings the signature Caymus style to a broader California canvas, drawing fruit from standout sites across Paso Robles, Lake, Monterey and San Benito Counties. Crafted by Chuck Wagner, it is a richly textured, deeply coloured Cabernet built from warm days, cool nights and rocky soils that help create concentration, plushness and remarkable intensity. It continues the house tradition of making a bold, generous Cabernet that has become one of California’s most recognisable wine styles.

Makuprofiili
In the glass, this wine shows a deep purple hue, almost black at the core, signalling its concentration and depth. The nose is expressive and layered, with crème de cassis, violets and dark chocolate lifted by hints of lilac, anise and cardamom. The palate is full-bodied and opulent, packed with dark fruit, sweet tobacco, mocha, leather, cigar box, vanilla and sweet liquorice. Despite its richness, it carries a polished, expansive character and finishes warm, spicy and persistent. This is a Cabernet with excellent aging potential and can be enjoyed now or cellared for up to 20 years.

This wine is sourced from carefully selected sites across California where hot days, cool nights and rocky soils encourage the vines to struggle slightly and produce concentrated fruit. The grapes are left hanging longer than usual on the vine to build ripeness and depth, a method that contributes to the wine’s dark, powerful style. That extended hang time requires careful judgment, as an early winter can quickly affect yield, but it is part of what gives Caymus its unmistakable signature.

Ruoka & tarjoilu
This Cabernet pairs beautifully with grilled ribeye, roast lamb, braised short ribs, venison or rich mushroom dishes, as well as aged hard cheeses. Serve at 16–18°C and consider decanting for 1–2 hours to let the aromas open and the textures soften, especially if enjoyed young.
