Caymus Cabernet Sauvignon Special Selection 2019 is the flagship wine from Caymus Vineyards and one of the most sought-after Cabernets in California. Produced only in exceptional years from the estate’s finest parcels, it has earned legendary status among collectors and wine lovers alike, including the rare distinction of being named Wine Spectator’s Number One Wine in the World twice.

Makuprofiili
Deep, inky ruby in the glass, this is still a youthful wine, but it quickly opens with time and air. The nose is intensely aromatic, showing dark cherry, blueberry pie, boysenberry, tar, milk chocolate, and licorice, all layered with impressive richness and depth. On the palate, it is powerful and concentrated, with flavors of dark cherry, blueberry, raspberry liqueur, boysenberry, shaved milk chocolate, and a touch of tar. The finish is long and seemingly endless, with the structure and balance to age gracefully for many years, gaining complexity over time.

Viininvalmistus
Special Selection is made only when the fruit from Caymus’ best vineyard plots reaches exceptional quality, reflecting careful vineyard selection and very low compromise in production. While detailed terroir and vinification specifics are limited, the wine is crafted under the guidance of Chuck Wagner, with a focus on achieving ripeness, concentration, and seamless texture in the finished Cabernet Sauvignon.

Ruoka & tarjoilu
This wine pairs beautifully with premium cuts of beef, grilled ribeye, roasted lamb, venison, and slow-braised dishes with rich sauces. It also works well with aged hard cheeses or dark chocolate desserts. Serve at 16–18°C, and consider decanting for at least 1–2 hours to allow the aromas and structure to fully emerge.
