Caymus Mer Soleil Silver Chardonnay 2021 is a fresher, more mineral-driven take on California Chardonnay, showing how the Wagner family can break with convention and still deliver impressive depth. Instead of the usual heavy oak treatment, the wine is aged in stainless steel and concrete, allowing the purity of the fruit and the coastal character of the vineyard to shine through. The result is a bright, precise Chardonnay with a distinctly modern style and a subtle nod to the innovation that has long defined Caymus.

Makuprofiili
In the glass, this Chardonnay shows a light, clean color that hints at its freshness. The nose opens with red grapefruit, lime, lemon zest, and stone fruit, creating an ароматic profile that feels lifted and vibrant rather than rich and creamy. On the palate, it delivers plenty of fruit framed by citrus, lemon meringue, and quince, with a crisp, well-balanced acidity running through the wine from start to finish. The texture is smooth yet energized, making it appealing now for its brightness and drinkability, while its structure suggests it can also hold up nicely over the next few years.

Viininvalmistus
The grapes come from the Wagner family’s Mer Soleil vineyard in the Santa Lucia Highlands of California, a coastal region where cool Pacific morning fog helps moderate temperatures and preserve freshness in the fruit. This maritime influence is key to the wine’s mineral edge and elegant acidity. Winemaker Charlie Wagner chose to vinify and mature the wine in stainless steel and concrete rather than oak, emphasizing clarity, precision, and the vineyard’s natural character.

Ruoka & tarjoilu
This Chardonnay is an excellent match for grilled shellfish, especially prawns, langoustines, or lobster, as well as other seafood dishes with citrus or herb accents. It also works well with roast chicken, creamy pasta, or fresh salads with avocado and fennel. Serve chilled at around 8–10°C, and decanting is not necessary.
