Château Cheval Blanc 2000

Château Cheval Blanc 2000 is one of the most celebrated wines of the legendary Saint-Émilion estate and is widely regarded as a benchmark vintage from the turn of the millennium. Built on a classic blend of Cabernet Franc and Merlot, it combines the finesse and structure of Cabernet Franc with the depth and richness of Merlot, resulting in a wine of remarkable balance, power, and elegance.

Makuprofiili
Deep ruby in color with the first signs of graceful maturity, this vintage already shows the complexity that has made it so highly sought after. The nose is intense and layered, offering dark berries, blackcurrant, cedar, tobacco, cocoa, liquorice, and a subtle graphite edge. On the palate, Château Cheval Blanc 2000 is full-bodied and concentrated, yet beautifully composed, with silky tannins and a long, refined finish. It has reached an excellent stage of development now, but still holds considerable aging potential for those who prefer to follow its evolution in bottle over time.

Ruoka & tarjoilu
This is a wine best served with dishes that match its depth and sophistication, such as roasted beef, lamb, duck breast, truffle-based dishes, or aged hard cheeses. Serve at around 16–18°C for the best expression, and consider decanting for about 1–2 hours if opening now, especially to allow the aromatics to fully unfold.
