Château Pavie 2005 is a benchmark Saint-Émilion Premier Grand Cru Classé from one of Bordeaux’s most celebrated and sought-after vintages. Powerful yet refined, it combines ripe Merlot richness with the structure of Cabernet Franc and Cabernet Sauvignon, offering remarkable depth, concentration, and finesse. Makuprofiili
In the glass, Château Pavie 2005 shows a deep, almost inky colour that hints at its concentration and youthfulness. The nose is richly layered with blackcurrant, dark cherry, and plum, lifted by aromas of cedar, dark chocolate, liquorice, and warm spice. On the palate, it is full-bodied and deeply textured, with silky fruit, ripe tannins, and vibrant acidity creating a wine of impressive structure and harmony.
The finish is long and persistent, leaving behind notes of black fruit, toast, and subtle earthy complexity. While already expressive with proper decanting, this is a wine built for the cellar and will continue to evolve beautifully over many years, developing even greater nuance and elegance with age.
Viininvalmistus
Château Pavie comes from the limestone and clay slopes of Saint-Émilion, where the vineyard’s hillside exposure helps deliver ripe, concentrated fruit with excellent natural freshness. The 2005 vintage benefited from a long, warm growing season with ideal ripening conditions, allowing the grapes to reach exceptional maturity. Merlot forms the core of the blend, supported by Cabernet Franc and a smaller proportion of Cabernet Sauvignon, all carefully harvested and vinified to preserve purity, structure, and balance. Aging in new French oak barrels adds polish, complexity, and seamless integration of fruit, tannin, and spice.
Ruoka & tarjoilu
This is a wine that pairs beautifully with richly flavoured dishes such as beef tenderloin, lamb rack, duck breast, venison, or truffle-infused cuisine. It also works well with aged hard cheeses and classic French dishes with deep sauces. Serve at around 16–18°C, and decant for several hours if opening now to allow the wine to fully open and show its breadth and perfume.
