Château Pavie Macquin 1990

Château Pavie Macquin 1990 is a beautifully matured Saint-Émilion Grand Cru Classé that captures the warmth, balance, and finesse of a classic Bordeaux vintage. With Merlot at its core, supported by Cabernet Franc and Cabernet Sauvignon, it offers the depth, structure, and elegance that have made top Saint-Émilion wines so highly regarded for generations.

In the glass, it shows a deep garnet-red colour that reflects its long ageing in bottle. The nose is layered and expressive, with aromas of ripe dark berries, dried fruit, cedar, leather, tobacco, and hints of spice and earth. On the palate, the wine is smooth and harmonious, with soft tannins, integrated acidity, and a richly developed fruit profile that has moved into tertiary notes of forest floor, mocha, and sweet spice. The finish is long and elegant, and while it is already at a lovely stage of maturity, it should still be enjoyed soon to capture its remaining vitality and complexity at its best.

Sourced from Saint-Émilion in Bordeaux, the wine benefits from a terroir well suited to Merlot, with clay-limestone soils that help produce ripe, generous fruit balanced by freshness and structure. The 1990 vintage was marked by favourable growing conditions, allowing the grapes to reach excellent ripeness and concentration before harvest. Vinification focused on preserving the natural balance and depth of the fruit, resulting in a wine with supple texture, layered complexity, and impressive ageing potential.

Ruoka & tarjoilu
This wine pairs wonderfully with roast lamb, beef fillet, duck breast, game, mushroom dishes, and aged hard cheeses, especially those with nutty or earthy character. Serve at around 16–18°C, and consider decanting for 30–60 minutes if the bottle is showing reduced aromatics, though older vintages like this should be handled gently to preserve their mature bouquet.
