Clos Saint-Jean Combe des Fous 2007 is a striking Châteauneuf-du-Pape built on very old Grenache vines from the warm, stony parcels around La Crau, with smaller amounts of Syrah, Cinsault, and Vaccarèse adding depth and structure. It captures the generous, powerful character of the southern Rhône while keeping a remarkable sense of purity and balance, making it a benchmark expression of the estate’s more serious, terroir-driven style.

In the glass, the 2007 vintage shows a deep, mature colour and an invitingly rich profile. Aromas of dark cherry liqueur, ripe plum, liquorice, dried Mediterranean herbs, and warm stone notes rise from the glass, with a subtle savoury complexity that reflects its terroir. The palate is full-bodied, smooth, and creamy, with ripe, sweet-fruited intensity framed by rounded tannins and a fresh underlying line that keeps everything in balance. The finish is long, warm, and fully integrated, and while it can still hold, this vintage is now at an ideal drinking window where its complexity and harmony are at their peak.

Viininvalmistus
Combe des Fous comes from the hot, rocky parcels around La Crau in Châteauneuf-du-Pape, where very old Grenache vines thrive in the region’s famously stony soils. Grenache is vinified in concrete to preserve aromatic clarity and fruit purity, while the other varieties are typically handled to bring more structure, including partial oak influence. The wine is then matured in a careful mix of stainless steel tanks and large casks to maintain its natural breadth and power without excessive oak imprint.

Ruoka & tarjoilu
This is an excellent match for rich, flavourful dishes such as roast lamb, game, slow-braised beef, duck confit, or herb-crusted venison. It also works beautifully with mature hard cheeses and Provençal dishes featuring rosemary, thyme, and olive oil. Serve at around 16–18°C, and decanting for one to two hours is recommended if opening now to allow the wine to fully unfold.
