In the glass, this wine shows a deep, mature garnet color that hints at its concentration and evolution. The nose opens with dense cherry and dark berry fruit, followed by dried herbs, liquorice, and a subtle animal-spice complexity that adds depth and character. On the palate, the 2005 vintage feels more classic and firm than the 2007, with still-vibrant tannins supporting a poised, energetic structure. The fruit remains layered and concentrated, and while it is drinking beautifully now, it still has excellent aging potential for those who appreciate mature Châteauneuf-du-Pape.

Viininvalmistus
The fruit comes from the iconic La Crau parcels in Châteauneuf-du-Pape, where old Grenache vines provide concentrated power and Mourvèdre from cooler, deeper soils contributes backbone and dimension. The vintage was classical and even, allowing for careful harvesting at optimal ripeness. Vinification followed the domaine’s restrained approach, with gentle fermentation in concrete and subsequent aging in foudres and barriques to preserve purity, structure, and a more traditional expression of the year.

This wine pairs naturally with rich, flavorful dishes such as roast lamb, game, braised beef, duck confit, and Provençal stews. It also works well with aged hard cheeses and herb-driven Mediterranean cuisine. Serve at around 16–18°C, and decanting is recommended to help the wine open up and show its full aromatic complexity, especially if enjoyed now.
