Dal Forno Vigne Seré Passito 2003 is a rare, small-batch dessert wine from Veneto that showcases the estate’s uncompromising pursuit of concentration, precision, and elegance. Though not officially labeled as a Recioto della Valpolicella, it follows the same spirit, made from carefully selected grapes that are dried for months to preserve natural sweetness and build remarkable depth.
Makuprofiili
In the glass, Vigne Seré 2003 appears almost impenetrably dark, with vivid purple highlights that hint at its richness. The nose is intensely layered, offering aromas of cherry liqueur, dried figs, cocoa, coffee, licorice, and warming spices.
On the palate, the wine is sumptuous and full-bodied, with silky tannins, concentrated sweet fruit, and a lively freshness that keeps everything in balance. The finish is long and persistent, unfolding with dark fruit, spice, and chocolate. While already expressive, it has the structure to continue evolving beautifully over time.
Viininvalmistus
Sourced from selected parcels around the Illasi Valley in Veneto, this wine reflects a warm vintage and a strict production philosophy centered on low yields and exceptional grape selection. The grapes are dried using the traditional appassimento method for around four months before undergoing a slow fermentation that retains natural sweetness, and the wine is then matured in new French barriques to add structure and complexity.
Ruoka & tarjoilu
Serve slightly chilled, ideally around 14–16°C, to highlight the wine’s freshness and aromatic detail. It pairs wonderfully with dark chocolate desserts, fig or cherry tarts, blue cheese, or simply enjoyed on its own as a contemplative after-dinner wine. Decanting for a short period may help open the wine’s aromas, especially in its youth.
