Domaine Parigot Meursault 'Les Vireuils Dessous' 2023 is a poised and terroir-driven Chardonnay from a cooler, higher site just north of the village of Meursault, above Premier Cru Les Genevrières. Rather than the broad, opulent style often associated with the appellation, this cuvée emphasizes precision, minerality, and aromatic clarity, offering a fresher expression of one of Burgundy’s most celebrated white wine villages.

In the glass, it shows a bright pale-golden color with youthful green reflections. The nose is elegant and focused, opening with citrus zest, white flowers, green apple, and a subtle chalky, saline edge that reflects the limestone-rich soils.
The palate is linear and finely structured, with lively acidity, pure fruit, and a mineral-driven finish that lingers beautifully. There is a sense of tension and lift throughout, supported by gentle lees complexity and restrained oak. While already expressive in youth, this is a wine with strong aging potential and should gain depth and nuance over the next several years.
Viininvalmistus
The grapes come from the high-lying lieu-dit "Les Vireuils Dessous," a cooler terroir north of Meursault village known for producing wines with more energy and minerality than the richer southern slopes. The vineyard’s limestone soils and elevated exposure contribute to the wine’s precision and freshness. Harvesting is done by hand, followed by gentle pressing. Fermentation takes place in French oak barrels, with a discreet proportion of new oak, typically around 15–20%, to add complexity without overshadowing the fruit. The wine is then aged on the lees with light bâtonnage to build texture and depth while preserving its refined, lifted character.
Ruoka & tarjoilu
This Meursault is a natural match for refined seafood dishes such as grilled lobster, scallops, oysters, turbot, or butter-poached fish, as well as poultry in cream sauce and mushroom-based dishes. Serve chilled at around 10–12°C, and consider decanting for 20–30 minutes if enjoying it young, to allow the aromatics and texture to open fully.
