Dominique Cornin Pouilly-Fuissé Les Plessys 2022 is a beautifully crafted white Burgundy that brings together old-vine concentration, biodynamic farming, and the natural finesse of Chardonnay. Sourced from vines planted as far back as 1920, it captures both the heritage of Pouilly-Fuissé and the freshness and precision that make this cuvée stand out.

In the glass, this Pouilly-Fuissé shows the polished, luminous character you’d expect from a finely made Chardonnay. The nose is expressive and inviting, with ripe peach, grilled pineapple, apple, citrus, and delicate white flowers lifted by a subtle mineral edge. On the palate, the wine is elegant and energetic, with layered fruit balanced by the chalky, limestone-driven minerality that gives the wine its sense of place. The oak influence is well integrated, adding texture and depth rather than weight. It is enjoyable now for its vivid fruit and clarity, but it also has the structure to develop gracefully over the next few years.

Viininvalmistus
Les Plessys comes from old Chardonnay vines rooted in the limestone-rich soils of Pouilly-Fuissé, in the Mâconnais area of Burgundy. Dominique Cornin farms biodynamically, with hand harvesting used to ensure only the best grapes are selected. After fermentation, half of the wine matures in 600-liter barrels and the other half in 228-liter barrels, before spending a further 12 months in stainless steel tank to preserve freshness and precision.

Ruoka & tarjoilu
This wine pairs wonderfully with roast chicken, creamy fish dishes, lobster, scallops, and poultry in a light cream sauce, as well as soft cheeses such as Comté or aged goat cheese. Serve chilled at around 10-12°C, and decanting is generally not necessary, though a short period in the glass can help the aromatics open up.
