Now over 25 years old, the wine is deeply mature and beautifully evolved in the glass, with a translucent garnet hue that reflects its age. The bouquet is layered and complex, offering dried cherry, forest floor, truffle, leather, and subtle spice, all unfolding with elegance and restraint. On the palate, it is fully integrated and harmonious, with silky tannins, fresh acidity, and a long, mineral finish. The fruit has shifted toward savory, tertiary notes, yet the wine still retains balance and vitality. It is drinking beautifully now, though it continues to show the kind of structure that has allowed top Burgundy from this site to age gracefully for decades.

Viininvalmistus
The wine comes from Dugat-Py parcels in the prized 1er Cru Lavaux St. Jacques vineyard in Gevrey-Chambertin, where old Pinot Noir vines grow in low-yielding limestone and clay soils. The grapes are harvested by hand and carefully sorted before fermentation in small open vats. It is then aged for around 18 months in new oak barrels, a élevage that adds structure and complexity while preserving the site’s signature mineral character.

Ruoka & tarjoilu
This mature Pinot Noir pairs especially well with roasted game bird, duck breast, mushroom dishes, venison, and earthy preparations such as truffle risotto or braised beef. Serve at 16-18°C, and if the bottle has been stored well, a brief decant of 30 to 45 minutes can help the aromas open without stripping away its delicate evolution.
