DuMOL Cabernet Sauvignon, Ballard 2019

DuMOL Cabernet Sauvignon Ballard 2019 is a beautifully restrained take on Sonoma Cabernet, showing a more classic style before the era of ultra-ripe, heavily extracted wines took hold. Sourced from the elevated Ballard Vineyard on Spring Mountain, it delivers remarkable intensity from tiny, cool-climate berries, with elegance, precision, and serious depth.

Makuprofiili
In the glass, this Cabernet shows a deep, dark ruby profile that hints at its concentration. The nose is layered and expressive, with dark and red fruit, dried thyme, wild sage, rose petals, and cedarwood coming together in a distinctly aromatic, mountain-grown style. On the palate, blackcurrant, dark cherry, bay leaf, anise, herbs, and a touch of grilled meat unfold with great finesse. The wine is polished and elegant rather than bulky, with fine-grained tannins and excellent balance. It has at least 10 years of aging potential, during which its complexity should continue to evolve beautifully.

Viininvalmistus
The grapes come from Ballard Vineyard, a small clearing high on Spring Mountain at around 700 meters above sea level, where cooler conditions help keep the berries small and concentrated. DuMOL’s approach is traditional and meticulous, with the wine aged for 20 months in French oak barrels, 57% of them new, adding structure and subtle spice without overpowering the wine’s natural freshness and mountain character.

Ruoka & tarjoilu
This Cabernet is a natural match for grilled ribeye, lamb chops, roast beef, venison, or dishes with herbs and charred elements that echo its savory notes. It is best served at around 16–18°C. Decanting for 1–2 hours is recommended, especially if enjoyed young, to allow the aromatics and tannins to fully open.
