L'Aventure Estate Cabernet Sauvignon 2019

L'Aventure Estate Cabernet Sauvignon 2019 is a standout expression of Paso Robles Cabernet, showing just how powerful and polished California can be at its best. Crafted by the French-born Stephen Asseo from a tiny, low-yield parcel on the estate vineyard, it combines 95% Cabernet Sauvignon with 5% Petit Verdot for extra depth, structure, and colour. This is a wine with real presence and pedigree, already recognised by top critics for its concentration and class.

Makuprofiili
In the glass, it pours a deep, dark red that hints at the intensity to come. The nose is packed with ripe blackcurrant, blueberry, cassis, liquorice, pencil shavings, and dried herbs, giving it that classic Cabernet profile with a distinctly Paso Robles richness. On the palate, the wine is full-bodied, layered, and tightly structured, with flavours of dark cherry, blueberry, tobacco, liquorice, and graphite unfolding over a concentrated core of fruit. The finish is long and impressive, with enough tannin and freshness to suggest excellent aging potential; Stephen Asseo recommends 3–4 years of cellaring, though it will reward even longer.

Viininvalmistus
The grapes come from L’Aventure Vineyard in Paso Robles, where the estate’s calcareous soils and maritime influence help give the wine both power and tension. Yields are kept very low, and the fruit is harvested and sorted entirely by hand to ensure only the best berries make it into the winery. Fermentation is followed by malolactic conversion in barrel, and the wine is then matured for 15 months in 100% new French oak, which adds structure, spice, and complexity without overpowering the fruit.

Ruoka & tarjoilu
This is a bold Cabernet Sauvignon that calls for equally substantial food, such as grilled ribeye, lamb chops, braised short ribs, or slow-roasted beef with herbs. It also works beautifully with hard aged cheeses. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking young to help the wine open up and show its full aromatics and texture.
