L'Aventure Optimus 2019

L'Aventure Optimus 2019 is a bold and distinctive California red that helped launch Stephan Asseo’s Paso Robles project, and it still shows the signature style that made the estate famous. Built around Syrah with Cabernet Sauvignon and Petit Verdot in a Rhône-meets-Bordeaux blend, it offers depth, power, and polish in equal measure. This is a wine with real personality, shaped by one of the region’s most respected and adventurous producers.

Makuprofiili
In the glass, it shows a deep ruby color that hints at the richness to come. The nose is layered and expressive, with aromas of blackcurrant, blueberry, ripe plum, dried violets, bay leaf, liquorice, pepper, and a subtle smoky note. The palate is full-bodied, rounded, and generous, yet carried by a fresh line of acidity that keeps everything lifted and balanced. Dark fruit, spice, and savory nuances unfold through a long, seamless finish. This is a wine that can be enjoyed now for its vibrancy, but it also has the structure to age gracefully for around 8 to 10 years, developing even more complexity over time.

Viininvalmistus
All grapes come from L'Aventure Vineyard in Paso Robles, where the estate works according to sustainable principles. The site’s calcareous soils and maritime influence help give the wine its combination of ripeness, freshness, and structure. Fermentation takes place in barrels, and the wine is then matured for 14 months in French oak, 89% of it new, before being bottled without filtration.

Ruoka & tarjoilu
This is an ideal match for grilled ribeye, lamb chops, slow-braised short ribs, venison, or rich dishes with herbs, black pepper, and smoky char. It also works beautifully with aged hard cheeses. Serve at 16–18°C and consider decanting for 1–2 hours, especially if opening it young, to let the aromatics and texture fully open up.
