L'Aventure Optimus 2020 is a bold, highly expressive red blend from Paso Robles that showcases both power and precision. Crafted by renowned French winemaker Stephan Asseo, it brings together Syrah, Cabernet Sauvignon, and Petit Verdot from the estate vineyards in Willow Creek District, where limestone-rich shale soils help shape its distinctive mineral edge. This is a wine that reflects both the character of its terroir and the ambitious, Rhône-meets-Bordeaux style that has made L'Aventure one of California’s most admired producers.
Makuprofiili
In the glass, Optimus 2020 shows a deep ruby color that hints at its concentration and richness. The nose is layered and generous, offering black and red cherry, blackberry, and plum, lifted by notes of thyme, olive tapenade, and a subtle touch of dried violet.
On the palate, it is full-bodied and structured, with juicy acidity and tannins that are firm but already approachable. Dark berry fruit is complemented by spice and a faint smoky nuance on the long finish, giving the wine both depth and energy. While it is enjoyable now, it has the balance and structure to age gracefully for around 10 years or more, developing added complexity over time.
Viininvalmistus
The grapes for Optimus 2020 come from L'Aventure Estate in the Willow Creek District of Paso Robles, an area known for its warm climate, excellent drainage, and calcareous shale soils rich in marine fossils and minerals. The blend is composed of 58% Syrah, 31% Cabernet Sauvignon, and 11% Petit Verdot, harvested from estate vineyards that are managed with a focus on concentration and terroir expression. After harvest, the wine undergoes alcoholic fermentation in 60% new French oak barrels, followed by full malolactic fermentation, and is then aged for 14 months in oak before bottling unfiltered and unfined to preserve its natural texture and complexity.
Ruoka & tarjoilu
This is a superb match for grilled beef tenderloin, duck, game dishes, or earthy mushroom-based preparations that can stand up to its richness and structure. Serve it at around 16–18°C to bring out the layers of fruit, spice, and mineral character, and consider decanting for 1–2 hours if opening it young to help the wine fully unfold.
