Ojai Vineyard Chardonnay Bien Nacido 2021 is a beautifully focused expression of Santa Maria Valley, shaped by the cool maritime climate of one of California’s most celebrated single vineyards. Crafted by Adam Tolmach, whose restrained, terroir-driven approach has been refined over four decades, this Chardonnay stands out for its precision, mineral depth, and quietly powerful style.

Makuprofiili
In the glass, the wine shows a pale straw-gold colour. The nose is elegant and layered, opening with citron blossom, green apple, wet stone, and toasted hazelnut, before evolving into subtle notes of salted butter and ripe citrus with air. The palate is sleek and tightly composed, with cool-toned fruit balanced by vivid acidity and a chalky, almost crystalline mineral core. There is real intensity here, yet the wine remains finely etched and refreshing, finishing long and saline. With its structure and balance, it should continue to gain complexity over the next several years.

Viininvalmistus
The grapes come from the older vines in the iconic Bien Nacido Vineyard in Santa Maria Valley, where Chardonnay benefits from the maritime influence and limestone-rich soils that encourage freshness, tension, and mineral nuance. The fruit is harvested by hand, whole-cluster pressed, and spontaneously fermented in used French oak barrels to preserve purity of fruit and site expression. The wine undergoes full malolactic fermentation and extended lees ageing for about 11 months, with no new oak, no bâtonnage, and minimal sulphur use.

Ruoka & tarjoilu
This Chardonnay pairs especially well with seafood dishes such as grilled lobster, scallops, or roasted halibut, as well as chicken with herbs, creamy pasta, or dishes featuring fennel and citrus. Serve chilled at around 10–12°C. Decanting is not necessary, though a little time in the glass will help the wine раскры its full aromatic range.
