Pahlmeyer Jayson Cabernet Sauvignon 2021 is a bold, finely tuned California red built around 82% Cabernet Sauvignon, supported by Cabernet Franc, Petit Verdot, Malbec, and Merlot for added depth and nuance. Sourced from four vineyards, including the Pahlmeyer Estate Vineyard, it reflects both the richness of Napa-style Cabernet and the careful precision of a top-tier blend. The 2021 vintage stands out for its purity, concentration, and strong aging potential.

Makuprofiili
In the glass, it shows a deep, intense color that hints at its concentration. The nose is layered and expressive, with blackcurrant, red currant, freshly baked pastry, clove, sage, leather, almonds, dried spices, and a touch of pepper, all lifted by a subtle aromatic freshness. The palate is powerful yet polished, delivering a vivid core of dark fruit wrapped in firm, finely grained tannins and bright natural acidity. A distinctive finish of bittersweet cocoa and orange peel adds complexity and length. This is a wine that can be enjoyed after a few hours of aeration now, but it also has the structure and balance to reward patient cellaring.

Viininvalmistus
The 2021 growing season offered ideal conditions for producing wines of clarity and intensity, with dry weather leading to low yields, small berries, and remarkable concentration. Harvest came early, but a mild and stable season allowed for slow, complete ripening, preserving freshness and naturally high acidity. Winemaker Kale Anderson vinified the wine using whole berries during fermentation rather than pressing them first, a technique chosen to extract more color and amplify flavor while preserving purity and texture.

Ruoka & tarjoilu
This Cabernet Sauvignon pairs beautifully with grilled ribeye, roast lamb, braised short ribs, or hearty mushroom dishes, as well as aged hard cheeses. Serve at 16–18°C, and decant for 1–2 hours if drinking young to allow the aromatics and structure to open fully. If cellaring, it should continue to evolve gracefully over many years.
