Built from Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, it combines impressive depth with finesse, drawing comparisons to a velvet-textured Margaux while showcasing the richness and precision that have made Peter Michael one of California’s most admired estates.

In the glass, this is a deeply colored red with a насыщened, nearly opaque core that hints at its concentration. The nose is expressive and layered, offering dark cherry, blackberry, blueberry coulis, morels, fresh leather, and vanilla, with subtle oak spice woven throughout. The palate is full-bodied and generous, with a lush, velvety texture and plenty of dark fruit at the center. Notes of black cherry, cassis, dark chocolate, and sweet tobacco add complexity, while the structure remains refined and balanced. Nicolas Morlet suggests giving it another 2–3 years to fully settle, and it should continue to evolve beautifully over the next few decades.

Les Pavots comes from Peter Michael’s estate vineyard in Knights Valley, a warm California site that gives the blend both ripeness and structure. The wine is crafted from 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot, and 7% Petit Verdot, harvested from the winery’s own vineyard and vinified with a focus on purity and balance. It aged for 18 months in 100% French oak barrels and was bottled unfiltered to preserve its depth and character.

This is a wine that calls for hearty dishes such as grilled ribeye, lamb loin, braised short ribs, venison, or mushroom-based preparations with rich sauces. It is best served at 16–18°C, and while decanting is not essential, 1–2 hours in a decanter will help open the aromatics and soften the wine’s powerful structure.
