In the glass, this 2019 vintage shows a dark, насыщенный ruby profile with impressive concentration. The nose opens with layers of black cherry, blackberry, and blueberry coulis, lifted by more savory notes of morel mushroom, fresh leather, and vanilla. On the palate, it is full-bodied and powerful, yet remains refined and balanced, repeating the dark fruit character while adding notes of dark chocolate and sweet tobacco. The structure suggests excellent longevity: it can be enjoyed now with decanting, but will also reward additional cellaring and should continue to evolve beautifully over the next three decades.

Les Pavots comes from Peter Michael Winery’s estate vineyard in Knights Valley, where the warm California climate and carefully managed hillside sites give the blend its depth, ripeness, and structure. The wine is composed of Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, harvested from the producer’s own vineyard blocks and vinified with a focus on precision and purity. It spent 18 months aging in 100% French oak barrels and was bottled without filtration to preserve texture and complexity.

This is a natural match for richly flavored dishes such as grilled ribeye, braised short ribs, lamb rack, or duck with earthy mushroom sauces. It also works well with aged hard cheeses and truffle-inflected dishes. Serve at around 16–18°C, and consider decanting for at least 1–2 hours if opening now, especially to let its aromatic depth and structure fully unfold.
