Peter Michael L’Esprit des Pavots 2016 is a polished and expressive Bordeaux-style blend from one of California’s most respected estates. As the second wine of Les Pavots, it offers remarkable depth and character in a more approachable style, with the added benefit of an outstanding 2016 vintage that brought freshness, balance, and precision to the wine.

Makuprofiili
In the glass, the wine shows a deep, dark ruby color that hints at its richness. The nose is layered and inviting, with aromas of dark cherry, plum, chocolate, black truffle, leather, licorice, and cedar, all lifted by a subtle floral and savory complexity. The palate is medium-full and already beautifully velvety, with ripe, well-integrated tannins and a supple texture. Flavors echo the bouquet, unfolding with dark fruit, cocoa, spice, and earthy notes that give the wine a distinctly Bordeaux-like profile. While it is enjoyable now, it also has the structure to develop gracefully over the next several years.

Viininvalmistus
This cuvée is made from fruit grown on Peter Michael’s own vineyards, Les Pavots and Au Paradis, in California’s Sonoma County. The 2016 blend combines Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, selected and assembled by winemaker Nicolas Morlet to reflect both power and finesse. After 18 months in French oak barrels, the wine was shaped into a refined, age-worthy expression of the estate’s Bordeaux-inspired style.

Ruoka & tarjoilu
This wine pairs beautifully with grilled ribeye, roast lamb, braised short ribs, mushroom dishes, and hard aged cheeses. Serve it at 16–18°C for the best expression of its aromatics and structure. Decanting for 1–2 hours is recommended if opening young, though it is already showing very well.
