Peter Michael L’Esprit des Pavots 2021

Peter Michael L’Esprit des Pavots 2021 is the estate’s Bordeaux-inspired second wine, but there is nothing minor about its quality or character. Drawn from the producer’s own Les Pavots and Au Paradis vineyards, this is a polished, expressive California red with a strong nod to the great wines of Bordeaux—especially in an outstanding vintage.

In the glass, this 2021 vintage shows a deep, dark-fruited profile with plenty of richness and finesse. The nose opens with ripe black cherry, plum, chocolate, black truffle, leather, liquorice, and cigar box, giving it a classic, layered aroma that feels immediately inviting. On the palate, it is medium-bodied with a silky, velvety texture and a seamless balance of fruit, spice, and earthy complexity. The blend has a refined structure and already feels approachable, though it should continue to develop gracefully over the next few years. It is drinking well now, but will reward short-term cellaring.

Viininvalmistus
L’Esprit des Pavots is made from fruit sourced from Peter Michael’s own vineyards, Les Pavots and Au Paradis, in California. The blend is built around Cabernet Sauvignon, Merlot, and Cabernet Franc, with a small proportion of Petit Verdot, and the wine is aged for 18 months in French oak barrels to add polish, structure, and aromatic depth.

Ruoka & tarjoilu
This is a versatile food wine for richly flavored dishes such as grilled ribeye, roast lamb, braised short ribs, duck breast, or mushroom-based recipes with earthy depth. Serve it at around 16–18°C, and consider decanting for 1–2 hours if opening молодо, as this will help the wine show its full aromatic range and soften the tannins.
