Harvesting is typically done by hand to preserve fruit quality, followed by traditional vinification and aging practices that allow the varietal character and cru identity to come through clearly.

This wine pairs beautifully with rich, flavourful dishes such as braised beef, osso buco, game, truffle pasta, mushroom risotto, and aged hard cheeses like Parmigiano Reggiano or Pecorino. Serve at 16–18°C, and decant for at least one to two hours if drinking young to soften the tannins and open up the aromatics.
