Quilceda Creek Cabernet Sauvignon 2012

Quilceda Creek Cabernet Sauvignon 2012 is a benchmark Washington Cabernet and a striking example of what the region can achieve at its very best. Crafted entirely from Cabernet Sauvignon, with fruit from the celebrated Champoux Vineyard and Mach One Vineyards in the Horse Heaven Hills AVA, it combines power, precision, and remarkable harmony. Makuprofiili
In the glass, the wine shows a deep, nearly black color that immediately signals concentration and depth. The nose is intensely layered, offering blackcurrant, blackberry, and dark cherry, framed by notes of black truffle, violets, pencil lead, dark chocolate, and sweet pipe tobacco. The palate is full-bodied, rich, and impeccably balanced, with silky tannins and a dense core of dark fruit complemented by refined oak spice and mineral complexity. Despite its youth, the wine already feels composed and elegant, but it has the structure and concentration to age beautifully for a decade or more, continuing to gain nuance and finesse over time.

Viininvalmistus
The fruit comes predominantly from Champoux Vineyard, with the remainder from Mach One Vineyards, both located in Washington’s Horse Heaven Hills AVA, an area known for its warm days, cool nights, and well-drained soils that are especially well suited to Cabernet Sauvignon. Harvesting is done entirely by hand to ensure only the highest-quality grapes reach the cellar. After gentle fermentation, the wine is aged for 20 months in 100% new French oak, adding depth, structure, and a polished, spicy complexity.

Ruoka & tarjoilu
This Cabernet Sauvignon is an excellent match for grilled ribeye, roast lamb, braised short ribs, or hearty dishes with mushroom and truffle elements. It also works beautifully with aged hard cheeses and rich, savory game. Serve at around 16–18°C, and decanting for one to two hours is recommended, especially if the wine is enjoyed in its youth.
