Quilceda Creek Cabernet Sauvignon 2021

Quilceda Creek Cabernet Sauvignon 2021 is a benchmark Washington Cabernet, crafted entirely from Cabernet Sauvignon sourced from Champoux Vineyards (90%) and Mach One Vineyards (10%) in the Horse Heaven Hills AVA. Produced by acclaimed winemaker Paul Golitzin, it combines power, precision, and remarkable depth, continuing Quilceda Creek’s long tradition of making some of the most sought-after wines in the region.

Makuprofiili
In the glass, the wine shows a deeply saturated, nearly opaque color that hints at its intensity. The nose is layered and expressive, unfolding with aromas of blackcurrant, blackberry, dark cherry, black truffle, violets, pencil lead, dark chocolate, and sweet pipe tobacco. On the palate, it is rich, dense, and impeccably structured, with the fruit and savory notes echoing the bouquet in a silky, seamless style. Despite its youth, the finish is already polished and exceptionally long, with considerable aging potential ahead—this is a wine built for patience and graceful development over many years.

Viininvalmistus
This Cabernet Sauvignon comes from prized vineyard sites in the Horse Heaven Hills AVA, where the dry climate and carefully managed vines create ideal conditions for ripe, structured fruit. Harvesting is done by hand, with meticulous sorting to ensure only the best grapes are selected. The wine is then aged for 20 months in 100% new French oak, adding complexity, texture, and refined spice to the final blend.

Ruoka & tarjoilu
Best enjoyed with richly flavored dishes such as grilled ribeye, braised short ribs, lamb, venison, or roast beef with herb jus. It also pairs beautifully with aged hard cheeses and dishes featuring mushrooms or truffle. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young to allow the wine to fully open.
