Quinta Sardonia QS 2018 is the estate’s flagship cuvée, crafted to express the full complexity of its biodynamic vineyards and a deeply uncompromising approach to winemaking. Built primarily on Tempranillo with Cabernet Sauvignon in support, it combines Spanish character with remarkable precision, structure, and elegance. The wine reflects the distinctive terroir of Sardón del Duero, where altitude and careful farming help shape a wine of real depth and longevity.

Makuprofiili
In the glass, QS 2018 shows a deep ruby color with violet highlights, hinting at both richness and freshness. The nose is layered and expressive, with blackcurrant, kirsch, violets, and aromatic spices, all lifted by subtle garrigue and well-integrated oak notes of dark chocolate and vanilla. The palate is juicy yet firmly structured, with silky tannins, vibrant acidity, and a mineral-driven finish that lingers with clarity and poise. The balance of ripe fruit and restrained complexity gives it immediate appeal, while its concentration and structure suggest excellent aging potential over the coming years.

Viininvalmistus
The grapes come from biodynamically farmed parcels around Sardón del Duero in Castilla y León, at altitudes of up to 800 meters, where the cool high-elevation climate helps preserve freshness and aromatic detail. The fruit is hand-harvested and carefully sorted before fermentation in temperature-controlled stainless steel tanks, with no added yeast to allow the vineyard character to come through naturally. The wine then matures for 19 months in French oak, with around 20–25% new barrels, and is bottled with minimal fining and filtration to preserve texture and terroir expression.

Ruoka & tarjoilu
QS 2018 pairs beautifully with roasted lamb, grilled beef, game dishes, duck, and rich mushroom-based plates, as well as aged cheeses and hearty Mediterranean cuisine. Serve it at around 16–18°C to allow the aromatics and structure to unfold fully. Decanting for at least one hour is recommended, especially if enjoying it young, to soften the tannins and open up the wine’s layers of fruit, spice, and oak.
