In the glass, this wine shows the depth and concentration expected from a mature, top-tier Châteauneuf-du-Pape. The nose is intensely layered, with black raspberry, cassis, blackberry, garrigue, Provençal herbs, licorice, and a distinctive savory note of beef blood and earth. On the palate, it is full-bodied, powerful, and richly textured, yet balanced by impressive elegance and freshness. The old-vine Grenache gives it ripe dark fruit, warmth, and silky depth, while the herbal and spicy Rhône character adds complexity and lift. The 2005 vintage has the structure to age for decades, though it is already showing beautifully and will continue to evolve over the long term.

Viininvalmistus
Le Secret des Sabon comes from very old vines, some over 100 years of age, with fruit largely sourced from La Crau, one of Châteauneuf-du-Pape’s most respected terroirs known for its stony soils and excellent heat retention. The vineyard is traditionally planted as a field blend, which explains why the exact proportions are not fully known, though Grenache clearly dominates. The wine is aged for around 18 months in demi-muids, helping preserve purity of fruit while adding subtle structure and complexity.

Ruoka & tarjoilu
This is a wine made for rich, deeply flavored dishes such as roast lamb, beef short ribs, venison, game birds, or slow-cooked Provençal stews with herbs and garlic. It also pairs beautifully with aged hard cheeses. Serve at around 16-18°C, and consider decanting for at least 1-2 hours if opening now to allow the wine’s full aromatic range to emerge.
