Roger Sabon’s Châteauneuf-du-Pape Cuvée Le Secret des Sabon 2007 is a rare and highly sought-after Grenache-based wine from one of the appellation’s most respected family estates. Drawn from a tiny parcel of century-old vines in the famed La Crau sector, this limited cuvée captures the power, depth, and perfume that make Châteauneuf-du-Pape so legendary.

In the glass, it shows a deep opaque plum-purple color, hinting at its concentration and intensity. The nose is strikingly complex, with layers of kirsch, blackberries, crème de cassis, grilled herbs, incense, truffle, charcoal, roasted meats, and garrigue, all woven together with remarkable precision. The palate is massive yet seamless, delivering rich, pure fruit, impressive depth, and a long, structured finish with plenty of tannic grip. While it can be enjoyed now with patience and proper aeration, this is a wine built for the cellar and should continue to evolve beautifully for many years, with excellent aging potential well beyond a decade.

Le Secret des Sabon comes from a small parcel of more than 100-year-old vines in La Crau, one of the most prized terroirs in Châteauneuf-du-Pape, known for its stony soils and ability to produce wines of exceptional power and concentration. The grapes are harvested carefully from these old vines, allowing the estate to select only the best fruit for this limited cuvée. Vinification is geared toward preserving purity, depth, and the intense character of the site, resulting in a wine that combines old-vine richness with striking balance and finesse.

This is a wine made for rich, flavorful dishes such as slow-braised lamb, grilled ribeye, venison, duck confit, or truffle-infused mushroom dishes. Serve it at around 16–18°C, and consider decanting for at least 1–2 hours if opening now to help раскры its full aromatic range and soften the structure.
