Shafer Vineyards Hillside Select 2012

Shafer Vineyards Hillside Select 2012 is one of Napa Valley’s most celebrated Cabernet Sauvignons, and a true benchmark wine for collectors and enthusiasts alike. Made entirely from 100% Cabernet Sauvignon grown on 14 small hillside parcels surrounding the Shafer estate, it is prized for its sheer intensity, depth, and remarkable longevity. First released as the wine that established Shafer’s reputation, Hillside Select has become an icon of Stags Leap District winemaking.

Makuprofiili
In the glass, Hillside Select 2012 is profoundly dark and concentrated, with the kind of inky core you expect from a top-tier Napa Cabernet. The nose is layered and expressive, showing dark plum, cassis, blackcurrant tart, anise, nutmeg, and rose petals, all framed by well-integrated French oak. On the palate, it delivers a powerful mix of dark plum and blueberry, joined by pomegranate, licorice, crushed stone, tobacco, sage, and a subtle smoky edge. The finish is exceptionally long and persistent, with plenty of structure to support further cellaring. While already impressive, it has the balance and depth to age gracefully for at least another 20 years.

Viininvalmistus
The grapes come from 14 small hillside blocks on the Shafer estate in Napa Valley, where the steep slopes and rocky soils naturally limit yields and help produce fruit with concentration and structure. The Cabernet Sauvignon is harvested from these carefully selected parcels and vinified with a focus on precision and intensity. For this vintage, winemaker Elias Fernandez aged the wine for 32 months in 100% new French oak barrels, adding polish, spice, and complexity to the finished wine.

Ruoka & tarjoilu
This is a serious wine best paired with richly flavored dishes such as grilled ribeye, braised short ribs, roast lamb, venison, or truffle-infused mushroom dishes. Serve at around 16–18°C for the best expression of fruit and structure. Decanting for at least 1–2 hours is recommended if opening now, especially to allow the wine’s powerful aromas and tannins to fully open.
