In the glass, Dom Pérignon 2015 shows a luminous, refined pale gold with a persistent fine mousse. The bouquet is layered and expressive, with notes of citrus peel, ripe stone fruit, white flowers, brioche, and a subtle mineral edge that gives the wine its sense of freshness and definition. The palate is precise and textured, balancing lively acidity with a creamy, polished mouthfeel. This Champagne pairs beautifully with scallops, oysters, sea bass tartare, sushi, or delicate shellfish dishes, where its freshness and subtle richness can shine. It is best served well chilled, ideally around 8–10°C, and does not require decanting.
