Dominio de Pingus Pingus 2021 is one of Spain’s most sought-after Tempranillos, crafted from tiny parcels of old-vine fruit in Ribera del Duero’s Castilla y León. With its extraordinary concentration, precision, and balance, it stands as a benchmark wine that reflects both the power of the region and the finesse of Peter Sisseck’s winemaking vision.

Makuprofiili
In the glass, Pingus 2021 is expected to show a deep, saturated ruby-purple colour with remarkable intensity. The nose typically reveals layered aromas of dark cherry, blackberry, plum, violets, spice, and subtle earthy and mineral nuances, along with refined oak complexity rather than overt woodiness. On the palate, the wine is concentrated yet impeccably poised, combining ripe black fruit, fine tannins, vibrant freshness, and a long, elegant finish. The partial whole-cluster fermentation adds aromatic lift and structure, while the restrained use of oak preserves purity and detail. Pingus 2021 has excellent aging potential and should evolve beautifully over many years, gaining further complexity, silkiness, and nuance.

Viininvalmistus
Pingus is made from very old Tempranillo vines in the Barrosso and San Cristóbal parcels, totaling just 4.2 hectares, with vines more than 65 years old and some even older. The sites sit in Ribera del Duero’s continental terroir, where warm summers, cold winters, and carefully managed vineyard conditions help produce fruit of exceptional depth and character. Harvesting is done by hand, and in this vintage nearly half the clusters were fermented whole, using stems that had reached full maturity. The wine was vinified in large 2,000-liter French oak casks and then aged for 21 months, with a portion remaining in large format throughout, before being bottled without fining or filtration.

Ruoka & tarjoilu
Best paired with richly flavored dishes such as grilled ribeye, roast lamb, braised short ribs, game, or mature hard cheeses. Serve at 16–18°C, and consider decanting for 1–2 hours, especially if opening young, to allow the wine’s layers of aromatics and structure to fully open.

Its reputation for purity, concentration, and world-class quality has earned it a place among Spain’s greatest wine producers.
