Viininvalmistus
Monte Bello comes from Ridge’s high-elevation vineyard in the Santa Cruz Mountains, where the cool mountain climate and rocky soils help preserve freshness even in warm vintages. In 2015, low yields and a very dry growing season produced small, concentrated berries, and the key to success was harvesting at just the right moment to capture full ripeness while retaining natural acidity. Ridge is known for its careful, minimal-intervention winemaking, allowing the character of the site and vintage to come through with clarity and balance.

This is a wine to serve with equally structured dishes such as grilled ribeye, lamb chops, braised short ribs, venison, or roast beef. It also pairs beautifully with aged hard cheeses and truffle-inflected dishes. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking young to allow the wine’s aromatic complexity and tannins to open fully.
