In the glass, Monte Bello 2016 shows a deep, насыщенный ruby color with the kind of intensity you expect from a top California Cabernet blend. The bouquet is layered and expressive, with dark cassis, blackberry, plum, cedar, graphite, tobacco, and subtle spice unfolding over time. There is also a cool mineral lift that keeps the wine feeling precise rather than overly lush. On the palate, the wine is full-bodied and richly textured, but the fruit is framed by excellent acidity and firm, fine-grained tannins. Cabernet Sauvignon provides the structure and dark fruit core, while Cabernet Franc brings aromatic lift and Merlot softens the edges. It already offers plenty of pleasure, but it should reward cellaring beautifully for 10 to 20 years, or even longer in this format.

Monte Bello comes from Ridge’s historic vineyard in the Santa Cruz Mountains, one of California’s most distinctive Cabernet-growing sites. The elevated, cool-climate terroir helps preserve freshness and structure even in warm vintages, while the rocky, well-drained soils naturally limit vigor and encourage concentration. In 2016, low yields due to spring frost and a hot, dry growing season resulted in highly concentrated fruit, making careful timing of harvest especially important. Ridge’s approach focuses on picking at optimal physiological ripeness to preserve acidity and balance, followed by traditional vinification designed to highlight site expression and aging potential.

This is a wine built for richly flavored dishes such as grilled ribeye, roast lamb, slow-braised short ribs, or venison. It also pairs well with aged hard cheeses and dishes featuring earthy mushrooms or truffle. Serve at around 16–18°C, and decanting for one to two hours is recommended if opening it young, especially to allow the structure and aromatics to fully open.
